About Solena: Solena Cheese started with Marc’s passion for cheese and a lot of experience in the hospitality industry.
Marc spent 10 years living and working in Australia, where he met Keila and continued building his career in sales, business development, and hospitality. While in Australia, he had the opportunity to work with Vannella Cheese, a well-known mozzarella producer, where he discovered the craft of making fresh mozzarella.
Working alongside experienced cheesemakers Vito Minoia and his son, Giuseppe, Marc learned the process from the ground up—from working with the milk to stretching and shaping fresh mozzarella. It was there that he developed a real appreciation for the quality, freshness, and craftsmanship that goes into making great cheese.
Marc and Keila eventually returned to the USA and decided to build something of their own. In 2021, they founded Solena Cheese, bringing the knowledge and experience they gained in Australia to their new home.
Today, Solena Cheese is focused on making fresh, high-quality cheeses with the same care and attention to detail that inspired Marc in the first place. Our goal is simple: make great cheese, keep it fresh, and share it with our customers.
The name “Solena” is a tribute to their beloved daughters, Sofia and Elena. It originated from a playful combination of their names, their shared enthusiasm for all things cheesy.
