About Keyton McCoy:
I am originally from Bowling Green Kentucky. However, with my Dad in the navy I sort of grew up everywhere. Both coasts, north, south, even a little time in Europe. I finished high school right here in Tampa at Robinson high school before going to Johnson and Wales in Miami for my culinary education. A few years after moving back to Tampa my parents decided to retire, which led my Dad into a fascination with gardening. One that went so far that he also started beekeeping. Something about my parents is that they believe that if you’re going to do something you should fully commit to it, and that’s what he did. After raising a few bee hives and producing honey by the gallon they couldnt give enough honey away to keep it from piling up, this led to the next stage of the hobby.. mead making. Bottles and bottles of mead that of course started as gifts and just for fun began to crowd their house and they had a wonderful idea of how to use it up. The Viking party was born. This party was something incredible they had decorated the whole house, the yard, booked live music and got all of their friends to dress up in their best viking costumes. Of course, we had to go over the top with the food as well. We would set up these huge buffets of homemade jerky, fresh breads, and a display of meats all grilled over a fire pit in the back yard. I wanted to take this story and this memory and write a menu that would be fitting a dinner here at the hotel.
